I’m not Emeril.  I’m not Martha Stewart.  But, a co-blogger from WV Bloggers  has requested the recipie for the chili I mentioned below.  So here it is. 

White Chili

  • 2 tsp vegetable oil
  • 2 med oinions chopped
  • 2 med celery stalks chopped
  • 1/2 med carrot chopped
  • 2 TBSP mild or hot chili powder
  • 4 cloves garlic minced
  • 10 oz skinless ground turkey breast
  • 2 cups low sodium, low fat chicken broth
  • 4 ounces drained cooked white beans
  • 1 TBSP minced cliantro
  • 1/4 tsp cinnamon
  • 1/2 tsp dried oregano
  • 1/4 tsp ground red pepper
  • 1 TBSP + 1 1/2 teaspoon all-purpose flour

In a large nonstick sausepan, heat oil; add onions, celery and carrot.  Cook over medium heat stirring frequently, 6-7 minutes, until onions are lightly browned.  Add chilli powder and garlic; cook, stirring frequently, 2 minutes

Add turkey and vegetables; cook stirring to break-up meat, 4-5 minutes or until no longer pink.  Add broth, beans, cilantro, cinnamon, oregano and pepper; bring to boil.  Reduce heat to low simmer, covered, 20 minutes until vegetables are tender and flavors are blended.

In a small bowl, combine flour and 1/4 cup water, stir until flour is dissolved.  Blend until smooth and add to chili; simmer, uncovered 20 minutes until slightly thickened. 

Makes 4 servings.  199 calories, 5g total fat, 1g saturated fat, 41mg cholesterol, +/- 160mg sodium [depends on broth], 19g total carbohydrate, 4g dietary fiber, 23g protein, 73mg calcium.

And in my world you can’t have chili without corn bread, so here’s a bonus ….

CORE Corn Bread

  • 1 1/2 c enriched yellow corn meal
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup SPLENDA
  • 1 cup plain fat-free yogurt
  • 1/2 cup fat-free sour cream
  • 1 TBSP olive oil
  • 2 large eggs or 1/2 cup Egg Beaters

Mix all dry ingredients together.  Mix all liquid/wet ingredients together.  Blend dry and liquid/wet ingredients.  Pour into 9″ deep-dish pie pan sprayed with Pam or muffin tins sprayed with Pam.  Bake at 375* for 30 minutes.

Serves 8 [if prepared in a pie dish], has 3 points if part of the Flex Program, 0 on CORE program.

  • Those look very tasty. Congratulations on the weight loss. I’m down a clothing size since I’ve been on the most recent diet. Smaller portions and better choices have been making a big difference for me. Now if I could just work on moving my ass more often…
